Flame Restaurant has many indulgent side dishes.

Flame Restaurant, a modern mountain steakhouse, unveiled its new look in December, and already, many dishes have gained a following, especially the Macaroni & Cheese. Executive Chef Jason Harrison hands over the recipe on this indulgent side dish:


Seasoned Flour

500      g          Flour, AP

25        g          Garlic powder

25        g          Onion powder

8          g          Paprika, sweet

2          g          Cayenne

50        g          Salt, kosher, ground fine

Combine all and mix well.  Reserve.

For the Cheese Sauce

56        g          Butter, unsalted

28        g          Seasoned flour

464      g          Milk

210      g          Cheddar, aged, grated

1.4       pc        Serrano peppers, seasoned with salt and pepper, grilled, peeled, seeded, minced

Heat butter in a heavy bottom pot until foamy.  Add the seasoned flour while whisking and cook for four minutes.  Add the milk and bring to a slow simmer while whisking.  Simmer for two minutes.  Shut off the heat and add the grated cheese and the peppers.  Whisk thoroughly until melted and wait for pasta.

For the Boiled Macaroni

2.1       Q         Water

21        g          Salt, kosher

1          lbs        Macaroni, elbow

Boil water and cook macaroni until tender but al dente.  Strain in a colander and add to the warm cheese sauce.


Place the macaroni into a round casserole container and reserve.  Cover liberally with warm cheese sauce and grated cheddar cheese.  Bake until cheese starts to brown.
